Here’s a fun recipe that turned out super good. I made it for a family event in the summer and got awesome compliments. I apologize that I don’t have measurements. I literally just throw things together and experiment sometimes. So, that’s what I recommend doing with this! Change, add, takeaway according to what tastes good for you and measure with your heart. Turkey Kale Pasta Salad
Ingredients:
-Whole grain noodles
-Kale (chopped)
-Yellow/orange peppers (chopped)
-Broccoli (lightly sautéed)
-Onions (chopped, lightly sautéed)
-Parmesan cheese
-Deli style turkey (chopped)
-Shredded cheese
-Olive oil
-Lemon juice
-Splash of apple cider vinegar
-Himalayan salt
-Pepper
Directions:
1. Chop kale, peppers, onions, and turkey.
2. Boil and strain noodles per directions on box. Lightly sauté broccoli and onions so they are still crunchy. Let cool.
3. Mix all ingredients together in large bowl. Store in fridge for 2-3 hours or until ready to eat.
4. Serve and enjoy!
